I came up with this recipe after a disastrous attempt at a boring tomato salsa during a get together. Everyone thought the citrus was a game changer!   1. First things first, wash and prep your citrus fruits! Give those oranges, limes, and grapefruits a good scrub. This step is super important for food safety, so don't skip it!
  2. Next, chop up your citrus fruits. I like to segment the oranges and grapefruits to get rid of those pesky membranes. It's a little extra work, but trust me, it's worth it for a smoother salsa! As for the limes, just cut them into small pieces.
  3. Now for the onions – finely dice a half a red onion. Don't cry – unless you're really into that kind of thing. If you are prone to tears, chill the onion for 30 minutes beforehand or briefly submerge it in cold water.
  4. Time for the cilantro! Chop about a half cup. This is where I usually get a bit carried away – I love cilantro, its vibrant!
  5. Next up, jalapeño! I used about a quarter of a jalapeño, but if you like things really spicy, add more! If you're unsure, start with less, you can always add more later.
  6. Now let's combine everything into a mixing bowl. Add your chopped citrus, red onion, cilantro, jalapeño. Mix it all together gently, so you don't accidentally squish everything!
  7. Don't forget the salt and pepper! I use kosher salt for this recipe, but you can use any kind you prefer. Add to taste (but maybe start with about a teaspoon). Freshly ground black pepper adds a nice touch too!
  8. Taste and adjust! See if you need more salt, pepper, or citrus. This is the fun part – you get to make it your own!
  9. Once you're happy with the flavor, transfer your salsa to a serving bowl. Give it another quick stir, and there you have it!
