In a large mixing bowl, whisk together 2 cups (250g) all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Make sure those baking essentials are well combined. Trust me, this makes a big difference.
In a separate bowl, use an electric mixer to cream together 1 cup (2 sticks) unsalted butter and 1 3/4 cups (350g) granulated sugar until light and fluffy. Creaming the butter and sugar properly makes for a tender cake. Don't rush it!
