This recipe is my go-to for a healthy and satisfying pizza night. I developed it after a friend raved about a cauliflower crust pizza she'd had at a fancy restaurant—but the price tag was crazy!   1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper – this is your best friend for easy cleanup!
  2. If using a head of cauliflower, grate it using a food processor or box grater until you have about 4 cups of cauliflower rice. If you use pre-made cauliflower rice, make sure it's well-dried. Seriously, this step is key!
  3. Place the cauliflower rice in a large bowl. Using your hands, squeeze out as much moisture as you possibly can. I know, it's a bit messy, but trust me, it's worth it for a crispy crust. Pat it down with paper towels to remove excess moisture.
  4. In a food processor, pulse together 1/2 cup of almond flour, 1/4 cup of grated parmesan cheese (optional, but yummy!), 1 large egg, 1 teaspoon of Italian seasoning, salt, and pepper. Pulse until just combined – you don't want to over-process.
  5. Add the pulsed mixture to the cauliflower rice and mix everything together thoroughly. The mixture should hold together when you press it in your hand. If it seems too wet, add a bit more almond flour, one tablespoon at a time.
  6. Form the cauliflower mixture into a thin crust on the baking sheet. You can use your hands to shape it into a 12-inch circle, or even a rectangular shape. It’s really up to you and how much you want to shape!
  7. Bake the crust for 20-25 minutes, or until it’s golden brown and slightly crispy around the edges. Keep an eye on it to prevent burning – ovens vary wildly!
  8. While the crust is baking, prepare your roasted vegetables. Toss your favorite chopped veggies (such as bell peppers, zucchini, onions, mushrooms) with olive oil, salt, pepper, and any other herbs you enjoy. Roast them for about 20 minutes, or until tender-crisp.
  9. Once the crust is cooked, remove it from the oven. Spread your favorite pizza sauce over the crust, leaving about a half-inch border. I like a simple marinara, but you can use any sauce that strikes your fancy!
  10. Arrange your roasted vegetables over the sauce. Sprinkle with mozzarella cheese, a little more parmesan (if you used it before), and any other toppings you love.
  11. Bake for another 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.
  12. Let the pizza cool slightly before slicing and serving. Enjoy your delicious and healthy cauliflower pizza! It's unbelievably good! Really!
