I created this recipe on a particularly chilly October morning, when all I wanted was something warm, comforting, and intensely flavorful to start my day. (We’ve all been there, right?). It's a delightful mix of creamy pumpkin, warming spices, and just a touch of sweetness. It's perfect for those mornings when you need a little extra sunshine in your life.

First, prepare your pumpkin puree. You can make your own from scratch, or use store-bought. If you’re making your own, just roast a small pumpkin, scoop out the flesh, and blend until smooth. (Easy peasy, lemon squeezy!).
Next, in a medium saucepan, combine the milk (any kind you like!), pumpkin puree, maple syrup, and pumpkin pie spice. Stir well to combine all the deliciousness.
Place the saucepan over medium heat, and bring the mixture to a gentle simmer. Don't let it boil! We want it to gently heat and meld together, not to explode! A simmering pot makes a happy cook.
Once simmering, add your rolled oats. Stir everything together and reduce the heat to low. Let it simmer gently, stirring occasionally, for about 5-7 minutes, or until the oats have reached your desired consistency. If it gets too thick, add a splash more milk; if it's too thin, keep simmering for a bit longer.
While the oats are cooking, prepare your toppings! You can chop up some nuts, get out your favorite spices, or even whip up some coconut cream. This adds a lovely touch, and looks sooo fancy!
Once the oats are cooked, remove the saucepan from the heat. Now the fun part: pour your oatmeal into a bowl, and top with all your delicious and delightful additions!
