  3. Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky. In a medium saucepan, combine the rinsed rice with water according to package instructions (usually a 1:1 ratio). Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender. Fluff the rice with a fork and let it cool slightly. But I LOVE when it's still warm, so it's up to you!
  4. Prepare the Vegetables: While the rice is cooking and the herring is marinating, prepare the vegetables. Dice the red onion into small pieces. Thinly slice the scallions. If using any other vegetables like avocado or cucumber, dice them as well.
  5. Assemble the Poke Bowl: Divide the cooked rice between two serving bowls. Arrange the marinated herring over the rice. Add the diced red onion, sliced scallions, and any other vegetables you are using. I also love adding some seaweed flakes, it adds a unique texture!
  6. Add the Sour Cream and Chives: Spoon a generous dollop of sour cream on top of the poke bowl. Sprinkle fresh chives over the sour cream. The sour cream adds a creamy, tangy contrast to the savory herring, while the chives provide a fresh, herbaceous flavor. It's the little things that make this recipe so tasty!!
