📖 Instructions

  1. First, let's tackle the star of the show—the bulgogi! Thinly slice about 1 lb of sirloin steak against the grain. Don't be shy, get those slices nice and thin. In a bowl, combine the sliced beef with 1/4 cup soy sauce, 2 tablespoons gochujang (Korean chili paste—adjust to your spice preference!), 1 tablespoon brown sugar, 1 tablespoon sesame oil, 1 teaspoon minced garlic, and 1/2 teaspoon grated ginger. Mix everything really well, making sure every piece of beef is coated in that delicious marinade. Let it sit for at least 30 minutes, or even better, marinate it for a few hours in the fridge for maximum flavor explosion!
  2. While the beef is marinating, it's time to prep the other components of our masterpiece. Cook about 2 cups of sushi rice according to package directions, or use a rice cooker—whatever floats your boat. Once cooked, fluff it with a fork and set aside to cool slightly. Next, grab your favorite veggies. I usually go with a mix of shredded carrots, sliced cucumbers, julienned bell peppers (red and orange are my faves!), and some shredded purple cabbage for a beautiful pop of color. Wash and chop these to your desired size—bite-sized is generally good. If you’re feeling adventurous, you can lightly steam or sauté these before adding them to the bowl, but it's not strictly necessary.
  3. Now, let's cook that bulgogi! Heat a skillet or griddle over medium-high heat. Once hot, add the marinated beef and cook until it's nicely browned and cooked through, about 3-5 minutes per side. Don't overcrowd the pan; cook in batches if necessary to ensure even browning. Once cooked, set aside to cool slightly and then slice it into thinner strips if needed.
  4. Finally, it’s time to assemble our glorious poke bowls! Start with a bed of fluffy rice, then top with the bulgogi, your colorful veggies, and a sprinkle of sesame seeds for added texture and flavor. Don't forget a drizzle of extra sesame oil and a dash of soy sauce if you're feeling extra saucy! Add a side of kimchi for extra tang and you’ve got yourself a five star meal that’s bursting with flavor. Get creative and add other yummy toppings that tickle your fancy!

📝 Notes

  • Marinate the beef for at least 30 minutes, or longer for a more intense flavor.
  • Adjust the amount of gochujang to your spice preference.
  • Feel free to add other vegetables you enjoy.
  • Serve with kimchi for a complete meal
