This Dragon Roll Poke Bowl isn’t your average poke bowl—it’s a flavor explosion inspired by the classic sushi roll. One of my friends, a huge sushi lover (and I mean huge), actually inspired this recipe! We were talking about our favorite sushi rolls, and somehow it evolved into a conversation about poke bowls. This recipe is a love letter to the incredible combination of flavor that you get in a perfectly prepared Dragon Roll. It’s surprisingly simple to make – even if you’ve never touched sushi rice or a sushi rolling mat before! I promise.

📖 Instructions

  1. First, let’s cook the sushi rice. Rinse 2 cups of sushi rice until the water runs clear. Then, combine the rice with 2 1/4 cups of water in a rice cooker or a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it steam for 10 minutes. Fluff with a rice paddle or fork. Set aside to cool slightly.
  2. While the rice is cooling, let's prep our star – the salmon. Gently pat 1 pound of salmon fillets dry with paper towels. Slice the salmon into 1/2-inch thick pieces, then into smaller, bite-sized cubes.
  3. Now for the magic of the Dragon Roll flavors! In a medium bowl, combine the cubed salmon with 1/4 cup soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, 1 tablespoon of sriracha (or more, to taste!), 1 teaspoon of grated ginger, and a sprinkle of black sesame seeds. Toss gently to coat the salmon evenly. Let it marinate for at least 15 minutes, but longer is always better (I usually let it marinate for at least 30 minutes in the fridge).
  4. Meanwhile, prepare your toppings! I like to use a mix of: 1/2 cup shredded carrots, 1/4 cup chopped avocado, 1/4 cup chopped cucumber, 2 green onions, thinly sliced; and a sprinkle of toasted sesame seeds. You can totally add your favorite toppings; think crunchy seaweed salad, tobiko (flying fish roe), or even some crispy wonton strips!
  5. Assemble your poke bowl! Divide the cooked sushi rice among 4 bowls. Top the rice with the marinated salmon, and then arrange your toppings artfully on top. Add a drizzle of more sriracha or chili garlic sauce if you want extra spice and heat. And a final sprinkle of sesame seeds never hurts!
  6. Garnish and serve! Optional: Add a few slices of avocado or a lime wedge for a beautiful finishing touch. Serve immediately and enjoy your stunning and amazingly delicious Dragon Roll Poke Bowl!

📝 Notes

  • Adjust the amount of sriracha to your preferred spice level. For extra flavor, marinate the salmon for a longer time. Don't forget to fluff the rice once cooked!
