They're bursting with flavor, vibrant colors, and are surprisingly light and refreshing (for nachos!). I got the inspiration after a crazy fun night with my friends who always push the boundaries of creativity in the kitchen.

This isn’t your average nacho recipe. Oh no, my friend. We're talking about a party in your mouth, a celebration of textures and tastes, all while being completely vegetarian.   1. Preheat your oven to 375°F (190°C). This is important for perfectly crisp tortilla chips.
  2. In a large bowl, gently toss 1 bag (12 oz or approximately 340g) of tortilla chips with 2 tablespoons of olive oil and 1 teaspoon of chili powder. Spread them out evenly on a large baking sheet. Make sure the chips aren't piled on top of each other or else some may not crisp up!
  3. Bake for 8-10 minutes, keeping a close eye, until golden brown and slightly crispy. Don't burn them; we want crispy, not charcoal!
  4. While the chips are baking, prepare your toppings. In another large bowl, gently mash one (15 oz) can of black beans with a potato masher or fork. Don't over-mash—a little texture is nice.
  5. Add 1/2 cup of your favorite salsa, 1/4 cup of chopped cilantro, and 1/4 cup of pickled jalapeños to the mashed black beans. Mix everything together gently.
  6. Once the tortilla chips are baked and cooled slightly, spread them evenly on a large platter or baking sheet.
  7. Now for the fun part, the toppings! Start with a generous layer of your black bean mixture. Then, sprinkle with 2 cups of shredded cheddar cheese (or your preferred cheese blend).
  8. Add your other favorite toppings: diced tomatoes (1/2 cup), sliced avocados (1/2 avocado, about 1/4 cup sliced), sour cream (optional, about 1/4 cup).
  9. For an extra touch of fiesta fun, consider adding a sprinkle of your favorite taco seasoning blend.
