  6. Add 1/2 teaspoon of vanilla extract (or more, to taste). This just adds a nice layer of flavor that elevates the dish beyond the standard.
  7. Finally, add a pinch of sea salt—about 1/4 teaspoon or to taste. This is important because it brings out the flavors of both the chocolate and the chickpeas. Trust me on this one. Don't skip the salt!
  8. Process it all! Blend the mixture until smooth and creamy. If you need to add more ice cold water (or more than two tablespoons), do it a little at a time until you get the desired texture. Scrape down the sides of the bowl as needed.
  9. Taste and adjust! Once it's blended to your liking, take a moment and taste your creation. You might need to add a tiny bit more maple syrup, cocoa powder or water based on your preferences. Don't be afraid to adjust things to your liking!
