  1. First things first, prep those veggies! Finely dice the red onion, tomatoes, and cucumber. You want them small enough to mingle nicely with the rest of the salsa, but not so small they disappear! Think about half-inch pieces.
  2. Next up, mince the garlic and fresh oregano. Don't skimp on the oregano! That distinctive gyro flavor is all in the oregano. Be generous!
  3. In a medium bowl, combine the diced red onion, tomatoes, and cucumber. Add the minced garlic and fresh oregano. Mix these bad boys together gently. We don't wanna mush anything!
  4. Now for the zing! Add the lime juice, and stir gently to combine. Taste the salsa and adjust the lime juice according to your taste buds. Do you like things sour? Add more lime juice!
  5. In a large skillet over medium heat, add the olive oil. Once the oil is shimmering, add the ground lamb or beef and crumble it. Don't overcrowd the skillet—cook the meat in batches if needed. This is going to make it nicely browned!
  6. Season the meat with salt, black pepper, and a generous pinch of paprika. Cook until the meat is browned and cooked through—this usually takes about 5–7 minutes. Drain any excess fat from the skillet before you do the next step.
  7. Once the meat is cooked, let it cool slightly before you add it to the salsa. This prevents the heat from wilting your lovely fresh veggies. Let it sit for 5 mins at least!
  8. Now, add the cooked lamb to the salsa. Toss it gently to combine. Taste and adjust seasoning as needed. Do you need more salt? More pepper? Listen to your tastebuds!
  9. Gently stir in the crumbled feta cheese (if using). Once this is all in, give everything another good stir. Then... you are done! Wow! Amazing work!
  10. Serve the gyro-flavored salsa immediately with pita bread, or store it in an airtight container in the refrigerator for up to 3 days. If you're making a big batch, I recommend taste-testing after it sits in the fridge for a little bit. The flavors mingle even better after they've hung out together for a while! That's the best thing about salsa!
