  1. First, give your chickpeas a good rinse. I usually soak them overnight for a smoother texture, but you can also use canned. Just drain them really well.
  2. If using dry chickpeas, boil them until tender – about an hour. Then drain them completely; this is super important for the right consistency.
  3. Next, add the chickpeas (1 1/2 cups), tahini (1/4 cup), lemon juice (2 tablespoons), garlic (2 cloves, minced - unless you hate garlic, then use less!), and salt (1 tsp, or to taste) to a food processor or blender.
  4. Whizz it up! Process until it's totally smooth and creamy. This might take a minute or two, and you might need to stop and scrape down the sides a few times.
  5. Now, with the motor running, slowly drizzle in ice water (about 1/4 cup, or more, to reach your desired consistency). The goal is a beautiful, spreadable texture.
  6. Once you've got that perfect consistency, give it a taste test and add more lemon juice, salt, or even a pinch of cumin if you're feeling fancy.
  7. Finally, transfer your hummus to a bowl. Drizzle with olive oil (about 1 tbsp), sprinkle with paprika, and maybe a few whole chickpeas for extra flair.
  8. Serve with warm pita bread, veggies, or whatever your heart desires! Enjoy!

📝 Notes

  • For an even smoother hummus, remove the skins from the boiled chickpeas after draining. This step is totally optional, though.
  • If your hummus is too thick, add a little more ice water, a tablespoon at a time. If it's too thin, add a little more chickpeas
