📖 Instructions

  1. First things first, wash and thoroughly dry all your fresh produce. This is a super important step to ensure your tabbouleh doesn't get soggy. Trust me on this one!
  2. Finely chop the artichoke hearts. Aim for small, almost dice-like pieces – this makes for better texture and mixing later on. Don't worry about getting them perfectly uniform, rustic charm is a thing!
  3. Next, finely chop the parsley and mint. The finer the chop, the more evenly the flavors will distribute throughout the tabbouleh. I usually spend a little extra time on this step; its worth it!
  4. In a large bowl, combine the chopped artichoke hearts, parsley, and mint. Give it a gentle toss to start mingling those flavors.
  5. Now, for the lemon juice! I find about ¼ cup of fresh lemon juice is perfect for a delightful tangy-fresh flavor. But, everyone's palate is a little different, so feel free to taste and adjust.
  6. Next, add the olive oil. I typically use about ¼ cup of good quality olive oil but it depends on what you prefer. Extra Virgin is wonderful, but any high quality olive oil will work fine.
  7. Add a pinch of salt and freshly cracked black pepper. Taste and adjust to your liking. Seasoning is key for making this recipe sing!
  8. Gently toss everything together with a fork, making sure all ingredients are coated evenly with the lemon juice and olive oil. Don't be too rough; you want to preserve the freshness of the herbs.
  9. Finally, taste test your tabbouleh! Make sure you're happy with the seasoning and the balance of flavors before serving it up. This is your masterpiece after all!
  10. Serve immediately, or chill for later. This tabbouleh is great fresh, but it also keeps well in the fridge. Just don’t let it sit too long, the artichoke will absorb the liquid and become softer

📝 Notes

  • Make sure to taste and adjust the seasonings to your liking. You can add more lemon juice if you want a more tart flavor.
  • If using fresh artichokes, remember to clean and trim them before chopping. This process can take a bit of time, so plan accordingly!
