  1. First things first, let’s prep the chicken. Cut about 1.5 lbs of boneless, skinless chicken breasts into bite-sized pieces. Season generously with salt, pepper, paprika, cumin, and garlic powder. Don't be shy with the spices! Remember, you can always add more but you can't take it away.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and then add the chicken. Cook until it’s browned and completely cooked through, about 8-10 minutes, stirring occasionally. Once cooked, set aside.
  3. In the same skillet, melt 2 tablespoons of butter. Add 1 cup of chopped onion and cook until softened, about 5 minutes. Then, stir in 1 cup of chopped green chilies and 1 cup of ranch dressing. Let it simmer for a few minutes to blend the flavors. Mmm, delicious!

  7. Fold the sides of the tortilla inwards, then fold the bottom up over the filling, and tightly roll to secure. You should get a nice neat little burrito.
