Wrap the tofu block in several layers of paper towels and place a heavy object on top (like a cast-iron skillet or a stack of books) for at least 30 minutes. This step is super important, don't skip it!
While the tofu is pressing, prep the veggies. Dice the onion, bell pepper, and garlic. If you're using spinach, give it a rough chop. Set everything aside; and I mean every thing
Once the tofu is pressed, crumble it into a mixing bowl using your fingers. You want it to resemble scrambled eggs. Don't overthink it, just get it into small pieces.
Heat a large skillet over medium heat. Add a tablespoon of olive oil or your favorite cooking oil. Once the oil is hot, add the diced onion and bell pepper. Sauté for about 5-7 minutes, or until the veggies are softened and slightly translucent.
