These mini bagels are the perfect treat for a lazy Sunday brunch, a quick after-school snack, or even a fun dessert for a get-together! They're surprisingly easy to make, requiring minimal ingredients and effort. I came up with this recipe after a long hike last summer with my friends. We were all exhausted and craving something sweet and delightful.

  1. Preheat your oven to 400°F (200°C). Line a mini muffin tin with parchment paper liners. This will prevent sticking and make cleanup a breeze!
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Whisk together until well combined. It should look like light, fluffy flour!
  3. In a separate bowl, whisk together 1/2 cup of milk, 1 large egg, and 1 tablespoon of melted butter. Make sure the butter is fully melted so it mixes in easily.
  4. Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon until just combined. Don't overmix; a few lumps are okay! Overmixing can make your bagels tough.
  5. Fill each parchment paper liner about 2/3 full with the batter. This leaves some room for the bagels to rise in the oven. Remember, it's better to slightly underfill rather than overfill to prevent them from overflowing!
  6. Bake for 12-15 minutes, or until the mini bagels are golden brown. They should spring back when lightly touched. Check after 12 minutes; ovens can vary quite a bit!
  7. Once baked, remove from the oven and let the mini bagels cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. Once the mini bagels have completely cooled, spread a thin layer of Nutella on top of each one. How much Nutella you use is entirely up to you--go wild!
  9. Arrange sliced strawberries on top of the Nutella. A classic combination but it really works. Yummy!
  10. Serve immediately and enjoy! They're best enjoyed fresh, but they'll still be pretty tasty the next day if you have any leftovers… which you probably won’t!

📝 Notes

  • Make sure your baking powder isn't expired! It’s crucial for the bagels’ rise.
  • Don't overmix the batter. A few lumps are perfectly fine!
