  2. While the oven preheats, prepare the mango salsa. In a mixing bowl, gently combine the diced mango, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt. Taste and adjust seasonings as needed. You want a vibrant, sweet, and slightly tangy salsa. I usually add a little honey too!
  3. If you’re using pre-cooked chicken, shred or dice it into bite-sized pieces. If starting with raw chicken, sauté it in a skillet with a little olive oil, salt, pepper, and a dash of chili powder until fully cooked. Let it cool slightly before using.
  4. Lightly flour a clean work surface. Stretch or roll out your pizza dough to your desired thickness and shape. Aim for a 12-inch diameter for a standard pizza. The thinner the crust, the crispier it will be!
