Preheat your oven to 350°F (175°C). While the oven's heating, let's get our ingredients prepped.
Grab a large skillet (oven-safe, ideally!). If you don't have an oven-safe skillet, you can transfer the frittata to a baking dish later. Add a tablespoon of olive oil to the skillet and set it over medium heat.
Now, rummage through your fridge! Gather all those leftover veggies, cooked meats, cheeses, or whatever you want to include. Chop them into bite-sized pieces. Seriously, get creative here! The more variety, the better! I found half an onion that needed to be used, and half a tomato. I also added some left over rotisserie chicken!
Add your chopped ingredients to the skillet and sauté for about 5-7 minutes, until they're heated through and slightly softened. If you're using raw vegetables that take longer to cook (like potatoes), you might want to cook them separately beforehand.
While the veggies are sautéing, whisk together 6 large eggs in a bowl. Add a splash of milk or cream (about 1/4 cup) for extra richness. Season generously with salt, pepper, and any other spices you like. I like to add a pinch of red pepper flakes for a little kick.
Pour the egg mixture over the vegetables in the skillet. Make sure the eggs are evenly distributed, so they get a chance to soak into the vegetables, giving you a nice flavourful meal!
Reduce the heat to low, and let the frittata cook on the stovetop for about 10-15 minutes, or until the edges are set but the center is still a little wobbly. This step is crucial for ensuring a creamy, not rubbery, frittata. Think of it as gently poaching the eggs in the veggie goodness. This is also a good time to add any cheese you want to have melted on the top.
Transfer the skillet to the preheated oven and bake for another 10-15 minutes, or until the frittata is set through and lightly golden on top. A knife inserted into the center should come out clean. Keep a close eye on it, and don't let it dry out!
Remove the frittata from the oven and let it cool for a few minutes before slicing. This will make it easier to cut and serve.
