This elegant carrot cake recipe is a family favorite – passed down through generations! It's moist, spiced to perfection, and just the right amount of sweet. I've tweaked the recipe over the years to make it extra easy for even the most beginner bakers (even if the instructions can get a little lengthy sometimes), but the results always remain amazing!

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan. You could also line it with parchment paper – that makes cleanup a breeze!
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Make sure everything's nicely combined. This is where my grandma used to sing while she baked!
  3. In a separate bowl, beat together the vegetable oil, sugar, and eggs until light and fluffy. If you have a stand mixer, go for it! Otherwise, good old-fashioned elbow grease will work just fine! Remember, a little extra effort makes for a super moist cake. If you don’t have eggs, it may not turn out quite the same – don't even try it!
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay. Overmixing can make the cake tough.
  5. Stir in the grated carrots, crushed pineapple (drained), and chopped walnuts (optional). Give everything a gentle stir to distribute evenly.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Every oven is a little different, so keep an eye on it!
  7. Let the cake cool completely in the pan before frosting. I usually let it cool for about an hour. Don’t rush this part; a hot cake won't frost nicely, and trust me, nobody likes a melty frosting disaster!

📝 Notes

  • Make sure your baking powder and soda are fresh for best results. Flat baking powder will make your cake flat!
  • If you're not a fan of walnuts, you can easily omit them, or try pecans, or even macadamia nuts. That's an idea I came up with recently after a trip to Hawaii!
