  1. Preheat your oven to 400°F (200°C). This is crucial for getting that perfect crispy exterior. Don't skip this step!
  2. Wash and scrub your potatoes thoroughly. I usually give mine a good scrub under cold running water, removing any dirt or blemishes. Then, pat them completely dry with a clean kitchen towel. Dry potatoes roast better!
  3. Cut the potatoes into roughly 1-inch pieces. I like to make them relatively uniform in size to ensure even cooking. Don't worry about being perfect; rustic is good!
  4. In a large bowl, toss the potatoes with olive oil, salt, pepper, minced garlic, and fresh rosemary. Make sure each potato piece is nicely coated – you want those seasonings to stick! I usually use about 2 tablespoons of olive oil for 2 pounds of potatoes. You might need more or less, depending on the size of your bowl and potatoes.
  5. Spread the potatoes in a single layer on a baking sheet. This is very important! Overcrowding prevents them from crisping properly. If necessary, use two baking sheets.
  6. Roast for 35-45 minutes, or until golden brown and tender. Every oven is a little different so keep an eye on them and maybe give them a little flip halfway through. Use a fork to check for doneness.
  7. Once cooked, remove the potatoes from the oven and let them cool slightly before serving. Resist the urge to eat them immediately, tempting as it may be. Letting them cool a bit will help them retain their crispiness.
  8. Optional: If you prefer super fluffy interiors, gently mash some of the potatoes lightly with a potato masher after they've roasted and cooled slightly. This adds a lovely textural contrast to the crispy outsides. I think it's worth trying at least once!

📝 Notes

  • For extra flavor, try adding a sprinkle of smoked paprika or other favorite herbs.
  • Don't overcrowd the pan, it will make the potatoes steam instead of crisp.
  • If your potatoes are on the larger side, increase the cooking time slightly. A fork should easily pierce the potatoes when they're done.
  • Feel free to adjust the amount of seasoning to taste. Some prefer more garlic or rosemary than others.
