  2. Wash and peel your potatoes. I like to use Yukon Golds; they’re creamy and roast beautifully, but any potato will do. Cut them into roughly 1-inch pieces. Don't worry about being perfect here; rustic is good!
  3. Wash the head of cauliflower and cut it into florets. Again, size doesn't have to be exact; roughly 1 to 1.5-inch florets are ideal.
  4. In a large bowl, toss the potatoes and cauliflower with 2 tablespoons of olive oil, salt, and pepper. Make sure everything is evenly coated. Don't skimp on the seasoning!
  5. Spread the potatoes and cauliflower in a single layer on a large baking sheet. This will ensure that they all roast evenly and don't steam.
  6. Roast for about 30-40 minutes, or until the potatoes are golden brown and tender. Give them a good toss halfway through to help them brown on all sides. You know they're done when a fork easily pierces them.
  7. Meanwhile, prepare the romesco sauce. (A separate romesco recipe would be great here!) If you don’t have time or you’re a romesco sauce noob, you can use store-bought, but seriously, make your own; it’s the best part of the dish. In a food processor or blender, combine roasted red peppers, toasted almonds (about 1/4 cup), a couple of cloves of garlic, 2 tablespoons of olive oil, a generous pinch of smoked paprika, a splash of red wine vinegar, and salt and pepper to taste. Blend until smooth and creamy. Add more olive oil if needed to get the desired consistency. Trust me. You wanna make it smooth and creamy.
  8. Once the potatoes and cauliflower are cooked, transfer them to a large bowl and gently toss them with the romesco sauce. Make sure to coat everything well, and then transfer back to the pan for a final 5 minutes in the oven to allow the sauce to meld and lightly caramelize on the edges. This is an optional step. However, that extra oven-time adds a subtle sweetness and gives the romesco-potato mixture a lovely sheen and slightly crispy edge.
  9. Serve immediately! Enjoy the amazing crunchy, creamy, and tangy flavors of your homemade roasted potatoes with cauliflower and romesco.
