This recipe is my go-to when I want a quick, healthy, and utterly satisfying meal. I developed it after a particularly challenging week—you know, one of those weeks where it feels like everything is going wrong—and needed something comforting, but light. It totally hit the spot! This dish is perfect for a weeknight dinner. It’s quick to make, but the flavor is rich and satisfying.

  1. First, let’s tackle those onions. Slice a large onion thinly and then put it into your large skillet with about a tablespoon of olive oil over medium heat. Cook, stirring occasionally, until they’re deeply golden brown and sweet. This will take about 15-20 minutes, so put on some music and relax. You’ll know they’re ready when they're almost jam-like in texture. Don't rush this step; it makes all the difference!
  2. Next up, the bacon! Chop your bacon into roughly 1/2-inch pieces, and add them to the skillet with the caramelized onions. Increase the heat to medium-high, and cook until the bacon is crispy. Use tongs to remove the bacon and set it aside. Leave the bacon fat in the pan—it adds amazing flavor!
  3. Now for the zucchini noodles. If you're using a spiralizer, go ahead and create those beautiful noodles. If not, a vegetable peeler will work, just make long ribbons. Once you have your noodles, set them aside. We don't want them to get soggy!
  4. Time to bring it all together! Gently toss the zucchini noodles into the skillet with the caramelized onions and bacon fat. Cook for 2-3 minutes, until the zucchini is tender-crisp but still has a little bite. Don’t overcook them, or they’ll become sad and mushy!
  5. Finally, add the crispy bacon back to the skillet and toss everything together gently. Taste and season with salt and pepper to your liking. I usually add a little extra black pepper. You could add some fresh herbs like parsley or chives here too! Serve immediately, and enjoy! It's seriously delicious. Seriously, like, unbelievably good.

📝 Notes

  • For extra flavor, consider adding a pinch of garlic powder or onion powder to the onions while they caramelize. A dash of balsamic glaze adds a lovely sweetness just before serving, but this is optional!
