  1. In a medium-sized mixing bowl, combine the rolled oats, milk (dairy or non-dairy), Greek yogurt (optional, but adds creaminess!), and sweetener (maple syrup or honey). Make sure everything is well combined. There should be no dry bits of oats clinging to the side of the bowl. Stir really well!
  2. In a separate small bowl, whisk together the cinnamon, brown sugar, and a pinch of salt. This will make a delicious cinnamon-sugar mixture. Be sure not to over-mix this – it's okay for there to be some brown sugar lumps.
  3. Pour the cinnamon-sugar mixture over the oat mixture. Use your spatula or a big spoon to make sure it's fully distributed. Try to gently fold the mixture; you don't want to make the oats soggy before they've had a chance to soak.
  4. Give everything another good stir and then gently fold in the chopped pecans or walnuts. The nuts can be omitted if you have any nut allergies or simply do not like nuts in your breakfast oats. If omitting nuts, you can add extra cinnamon!
  5. Transfer the mixture to a jar or an airtight container with a lid. Close the lid tightly. Make sure it's nice and sealed! Nobody wants to find a spilled jar of overnight oats in their fridge.
  6. Place the jar or container in the refrigerator and let it sit overnight (or for at least 4 hours) for the oats to soften and absorb the milk and flavors. If you’re short on time, then let it sit for at least 2 hours. The longer the better!
  7. When you’re ready to eat, give the oats a gentle stir. You might find they've thickened up a bit. If they're too thick you can add a tablespoon or two of milk to adjust the consistency.
  8. Spoon the oats into a bowl and enjoy! Top with extra cinnamon, chopped nuts, fresh fruit, or a drizzle of maple syrup, if desired. I personally like mine with a big dollop of whipped cream!
