  1. Preheat your oven to 375°F (190°C). Make sure your skillet is nice and hot before you start!
  2. Wash and roughly chop 5 ounces of fresh spinach. I always buy extra just in case – there's nothing worse than running out of spinach halfway through a recipe!
  3. In a medium bowl, whisk together 2 large eggs. Season with a pinch of salt and freshly cracked black pepper. Add a dollop of cream or milk for extra richness if you like (I do!).
  4. Heat a tablespoon of butter (or olive oil if you prefer) in your oven-safe skillet over medium heat. Once melted, add the spinach and cook until it's wilted and reduced in volume. It should be nice and tender, not soggy. This usually takes about 5-7 minutes.
  5. Once the spinach has wilted, add 1/4 cup of grated Pecorino Romano cheese and stir to combine. I like to use a good quality cheese here, it makes all the difference. Seriously!
  6. Using a spatula, create two wells in the spinach mixture. Gently crack the eggs into these wells, being careful not to break the yolks. Don't worry if the yolks crack a little, it's not the end of the world.
  7. Sprinkle the remaining grated cheese over the eggs and spinach. Go wild – you can never have too much cheese, right?
  8. Carefully place the skillet into the preheated oven. Bake for about 20-25 minutes, or until the egg whites are completely set and the yolks are cooked to your liking. If you prefer your yolks really runny, reduce the baking time by a few minutes.
  9. Once cooked, remove the skillet from the oven and let the Florentine Eggs rest for a couple of minutes before serving. Enjoy the creamy texture and flavour explosion!
