Ciao a tutti, pizza lovers! Today, I'm taking you on a culinary journey to Florence, Italy. Well, not really to Florence, more like inspired by Florence. I recently got back from a trip and it made me crave authentic Italian food, specifically pizza! This recipe is my attempt to recreate the delicious pizzas I ate there, with a dash of my own creativity (and maybe a bit of a mess in my kitchen).

It’s deceptively simple but yields incredibly satisfying results; that crispy, chewy crust, and the melted mozzarella oozing with flavour! One of my friends even told me that their kids think this is better than any pizza place. Don’t worry I’m not threatened, I secretly agree.

  1. Preheat your oven to 450°F (232°C). If using a pizza stone, place it in the oven while it preheats.
  2. In a large bowl, combine 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar. Give it a good whisk!
  3. Make a well in the center of the flour mixture. Add 1 cup of warm water and 2 tablespoons of olive oil. Stir with a wooden spoon until a shaggy dough starts to form.
  4. Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, or until smooth and elastic. If it's too sticky, add a little more flour, but don't overdo it!
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for at least 30 minutes, or until doubled in size. (I usually put mine near the heater; don't judge!)
  6. Punch down the dough to release the air. Divide it in half if you want two pizzas or want to make one really thin!
  7. On a lightly floured surface, roll out one portion of the dough to your desired thickness. Aim for about 1/8 inch for a nice thin crust. It can be a bit tricky at first, take your time. Watch out for those holes!
  8. Carefully transfer the rolled-out dough to a pizza peel (or a rimless baking sheet dusted with cornmeal) to avoid sticking.
  9. Spread a thin layer of your favorite tomato sauce (I like a homemade basil sauce), leaving a 1/2-inch border.
  10. Sprinkle generously with mozzarella cheese. Add your favorite toppings. I'm partial to pepperoni, mushrooms, and onions. Get creative though!
  11. Carefully slide the pizza onto your preheated pizza stone (or baking sheet). Bake for 10-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned. Keep an eye on it; ovens can be fickle!
  12. Remove from the oven. Let it cool for a few minutes before slicing and serving. Enjoy your amazing homemade pizza!

📝 Notes

  • Don't be afraid to experiment with different toppings!
  • For a crispier crust, pre-bake it for 5 minutes before adding toppings.
  • If you don't have a pizza stone, a baking sheet works just fine!
