  3. Now, chop your sausage into bite-sized pieces. I'm using Andouille sausage today; it gives it a delightful kick. About 1/2-inch pieces are great.
  4. Time to get cooking! Add 1 tablespoon of olive oil to the Instant Pot and saute the sausage on the 'saute' function until browned. This adds a lovely depth of flavor. Don't be afraid to get a little crispy!
  5. Once the sausage is looking delicious, toss in those peppers. Saute them for about 3-5 minutes, until they start to soften up a bit. Stir occasionally to ensure even cooking.
