This recipe is super easy to make, even if you're a total beginner in the kitchen. Seriously, if I can do it, anyone can! One time I was trying this recipe in a hurry to get to a meeting and I accidentally put in way too much honey. It was an epic fail, and let's just say I learned my lesson about double-checking measurements. But hey, even mistakes make great stories! You're going to get so many positive vibes from this, trust me.

The amazing thing about this smoothie is its versatility. It is the perfect healthy breakfast, afternoon pick-me-up, or post-workout refuel. It's creamy, dreamy and bursting with flavor thanks to the wonderful combination of blueberries and coconut. I actually started making this smoothie for my sister. She's a super-busy mom with three kids who didn't have time for elaborate breakfasts. She loved it! It is the perfect way to help you get your daily dose of vitamins and nutrients, while also indulging in something scrumptious. I have lots of other ideas for smoothies that I will be sharing in the future, so stay tuned!

šŸ“– Instructions

  1. Gather your ingredients and equipment. Make sure your blueberries are washed and drained. If using fresh blueberries, make sure to measure the correct amount, as frozen blueberries will slightly vary in their volume.
  2. Add the coconut cream, honey, and vanilla extract to the blender.
  3. Add the frozen blueberries to the blender.
  4. Blend until smooth and creamy, pausing to scrape down the sides as needed. For a really smooth smoothie, blend on high speed for around 30-45 seconds.
  5. Taste the smoothie and add more honey or vanilla extract if needed. Some people prefer a sweeter smoothie, whereas some prefer it slightly less sweet. Make sure you adjust it to your preference.
  6. Pour into a glass and garnish with fresh blueberries and a few shredded coconut flakes, if desired.
  7. Serve immediately and enjoy! This smoothie is incredibly refreshing and satisfying, particularly for a light brunch, or as a snack between meals. It's a great way to start your day or refuel after a workout. You could even try freezing it in popsicle molds for a frozen treat!
