This Spicy Watermelon & Avocado Salad with Jalapeño is a surprising and refreshing mix of sweet, savory, and spicy flavors. It's the perfect summer salad for those who enjoy a bit of a kick. I actually came up with this recipe during a particularly hot summer while sitting in the backyard listening to my neighbors fight. A true culinary miracle, I must say.

  1. First things first, prep your watermelon! Cut the watermelon into roughly 1-inch cubes. Don't stress about making them perfect – rustic is good!
  2. Next up, the avocado. Cut the avocado in half, remove the pit, and then slice it into roughly the same size chunks as your watermelon. To prevent browning, sprinkle the avocado pieces with a little lime juice immediately.
  3. Now for the jalapeño – the star of this spicy show! Carefully slice the jalapeño in half lengthwise and remove the seeds and membranes. This is where most of the heat is located, so get rid of the white stuff if you are sensitive to spice. Finely dice the jalapeño flesh. If you want to be extra careful, I highly suggest using gloves to avoid any irritation to your skin!
  4. In a large bowl, gently combine the watermelon, avocado, and diced jalapeño. Be very gentle to prevent the watermelon from breaking down too much – you want some nice juicy watermelon chunks!
  5. In a small bowl, whisk together your lime juice, olive oil, and a pinch of salt. I like to use a good quality olive oil to really enhance the taste. You can adjust the salt level to suit your preferences.
  6. Pour the lime juice dressing over the salad and toss gently to coat. Try to avoid over-mixing the salad, as you want everything to retain its lovely texture.
