This Green Apple Mint Lemonade recipe is incredibly easy and refreshing. Perfect for a hot summer day or any time you need a pick-me-up. I stumbled on this recipe quite by accident – I was trying to use up some leftover apples and mint from my garden, and this is what I came up with. It's since become a favorite in my household!   1. First things first, wash and chop your apples. I usually use about 2 medium-sized green apples, but you can adjust this depending on your preference and how strong of an apple flavor you like. Chop 'em up into chunks small enough for your juicer to handle.
  2. Next, grab your trusty juicer! Juice those apple chunks until you get about 1 ½ cups of apple juice. Don't worry if you don't get exactly that amount - some apples are juicier than others.
  3. Now for the minty fresh part! Roughly chop about ½ cup of fresh mint leaves. I tend to use more if I'm feeling particularly minty-fresh, and it's never a bad thing!
  4. In a large pitcher, combine the apple juice, mint leaves, and the juice of 1 lime. This adds a nice zesty contrast to the sweetness of the apples and the cooling mint. Stir gently with a wooden spoon or whisk.
  5. If you prefer a sweeter lemonade, add simple syrup to taste. I personally like to start with about ¼ cup and add more little by little until it's perfectly balanced for my taste buds.
  6. Stir well, making sure the simple syrup dissolves completely and the mint leaves release their aroma. You'll know you've done it right when you get that amazing minty-apple scent.
  7. Taste and adjust! Sometimes you need a little extra lime, or maybe some more simple syrup. It's your drink, so make it just the way you like it!
  8. Add ice and water - This is the part that transforms your concoction into actual lemonade. I use about 2 cups of ice (maybe more, depending on how cold I want it) and then I fill the pitcher with cold, filtered water until it's perfectly full.
