  3. Prepare the flounder: Pat the flounder fillets dry with paper towels. This step is super important for crispy skin!. Score the flounder fillets carefully—just a few shallow cuts on top—to prevent them from curling during baking. Also, make sure your knife is really sharp!
  4. Stuff the flounder: Place about 1/4 cup of the crabmeat stuffing into the center of each flounder fillet, spreading it evenly to about halfway through the length of each fillet. Don't overfill! You dont want it to burst open in the oven! This is the fun part, and the most satisfying!
  5. Bake the flounder: Carefully place the stuffed flounder fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the flounder is cooked through and flakes easily with a fork. The baking time will depend on the thickness of your fillets. Cooking times can be tricky, and may vary depending on your oven!
  6. Garnish and serve: Once cooked, carefully remove the flounder from the oven and let it rest for a few minutes. Garnish with extra parsley and a lemon wedge. Serve immediately. It's delicious!
  7. Optional: For added flavor, you can add a sprinkle of paprika or a few drops of hot sauce to the crabmeat stuffing. Get creative! Taste is subjective, don't be shy to experiment!
