This simple recipe is a weeknight staple in my house. It’s healthy, comforting, and a great base for countless other dishes – think stir-fries, fried rice, or even a simple rice bowl! My kids absolutely love it! I remember one time, my daughter, Lily, was having a particularly fussy eating day. But even she gobbled this up. I am telling you, it’s that good! It's one of my go-to recipes when I am short on time but still want a delicious and nutritious meal. Honestly, it’s so easy, even a beginner cook can master it.

The beauty of this recipe lies in its versatility. You can easily adjust the amount of peas and carrots to your liking, or even add other vegetables to create a unique flavor profile. One time, I added some diced bell peppers, and it was a surprising success! The slight sweetness of the peppers really complemented the peas and carrots. This simple dish can be a blank canvas for creativity. Don’t be afraid to experiment and make it your own. Let’s get started!

📖 Instructions

  1. First, you'll need to rinse your rice. Give it a good wash under cold running water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming sticky. I usually do this in a fine-mesh colander, but a bowl works too.
  2. Next, combine the rinsed rice and about 1 3/4 cups of water in your medium saucepan. Bring this to a rolling boil, give it a little stir, then reduce the heat to low. Cover tightly with a lid and let it simmer for about 15-20 minutes, or until all the water is absorbed and the rice is tender.
  3. While the rice is simmering, prepare your veggies. Wash the peas and carrots thoroughly. If you're using frozen, make sure to thaw them first. Then, add them to the rice during the last 5 minutes of cooking. Don’t overcook them, you want them to remain vibrant and slightly crisp.
  4. Once the rice is cooked, remove it from the heat and let it stand, covered, for another 5 minutes or so. This allows the steam to finish cooking the rice and make it extra fluffy. This is super important for maximum fluffiness. Don't skip this step!
  5. Finally, fluff the rice gently with a fork. And that's it! Serve your delicious boiled rice with peas and carrots hot, and enjoy it. I personally love adding a pat of butter, it's sooo good!

📝 Notes

  • For fluffier rice, use a rice cooker or a pot with a tight-fitting lid.
  • Don't overcook the peas and carrots, or they'll lose their vibrant color and texture. Aim for tender-crisp.
  • Feel free to experiment with different seasonings, such as salt, pepper, garlic powder, or herbs, to customize the flavor to your taste.
