These Chai Spice Energy Bites are the perfect grab-and-go snack for those busy mornings or afternoon slumps. They're packed with flavor and energy thanks to the warming spices of chai and the wholesome goodness of dates and nuts. I created this recipe after a particularly hectic week where I needed something quick, healthy, and delicious to keep me going between meetings. Plus my nephew loves them and I'm pretty sure they're helping him to concentrate better in school. It's awesome.

Making these bites is incredibly simple and requires minimal ingredients. The combination of Medjool dates, creamy almond butter, and aromatic chai tea creates a naturally sweet and satisfying treat. 📖 Instructions

  1. Combine all ingredients in a food processor or blender and process until a sticky dough forms. This might take a minute or two, so be patient and scrape down the sides as needed. Don't over-process, or you'll end up with a completely smooth and not very tasty paste. We want some texture!
  2. Once the dough is mixed, line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze. Who doesn't love easy cleanup? Seriously!
  3. Roll the dough into small balls, about 1 inch in diameter. You should get around 12-15 bites depending on the size. You can make them bigger or smaller—it's your choice, really!
  4. Place the balls onto the prepared baking sheet, leaving a little space between them.
  5. Refrigerate the energy bites for at least 30 minutes to allow them to firm up. Or you could put them in the freezer for 20-25 minutes—they'll harden faster and be ready sooner! If you're impatient like me you might choose the freezer.
  6. Once firm, remove the energy bites from the fridge or freezer and store them in an airtight container at room temperature for up to a week, or in the fridge for up to two weeks. I know it's tempting to eat them all immediately but try to resist! You'll thank me later. Maybe. Probably.

📝 Notes

  • If your dates are particularly dry, you may need to add a tablespoon or two of water to help them blend smoothly. You could also add a drizzle of honey for extra sweetness but the dates are sweet enough for me!
