  1. Begin by gathering all your ingredients. Make sure your almond butter is at room temperature for easier blending. Also, if using dried cherries, ensure they are chopped into small pieces. If using fresh cherries, pit and roughly chop them.
  2. Add the almond butter, cocoa powder, maple syrup, vanilla extract and salt to the food processor or blender. Pulse until well combined, scraping down the sides as needed. This might be a good time to have a little taste test, don't judge me!
  3. Next, add the rolled oats and chopped cherries. Pulse until everything is evenly mixed. You may need to pulse on low and scrape down the sides a few times to ensure all ingredients are well incorporated. The mix should hold its shape well without being overly sticky.
  4. Now for the fun part. Line a baking sheet with parchment paper. If you’re feeling fancy, you can use a mini muffin tin for perfectly formed energy bites. Roll small portions of the mixture into 1-inch balls. I find a tablespoon scoop useful to ensure consistent sizing.
  5. Once you've rolled all your energy bites, place them on the prepared baking sheet. Pop them into the fridge for at least 30 minutes to firm up. The longer they chill, the firmer they become. Perfect for a warm summer afternoon.
  6. After 30 mins (or longer if you prefer them more firm), remove the energy bites from the fridge and enjoy! These energy bites are perfect for a quick snack, pre- or post-workout fuel, or even a little treat. Store them well to keep those lovely flavors fresh for longer!

  • For a sweeter treat, increase the maple syrup. For a more intense chocolate flavor, use dark cocoa powder.
