📖 Instructions

  1. First, let’s tackle the curry. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add 1 finely chopped onion and sauté until softened, about 5 minutes. This adds a nice base flavor and depth to the curry. Don't be afraid to let it brown a little for extra flavor!
  2. Next, add 2 cloves of minced garlic and 1 tablespoon of grated ginger. Cook for another minute, until fragrant. Mmmmm, smells amazing already!
  3. Stir in 2 tablespoons of curry powder, 1 teaspoon of turmeric, 1/2 teaspoon of cumin, and a pinch of cayenne pepper (optional, for extra heat!). Cook for 1 minute more, stirring constantly, to toast the spices and really release their aroma.
  4. Now, add 1 (14.5 ounce) can of diced tomatoes, undrained, 1 cup of vegetable broth, and 1 (15 ounce) can of chickpeas, rinsed and drained. Bring the mixture to a simmer, then reduce heat and cook for 15-20 minutes, or until the sauce has thickened slightly. Season with salt and pepper to taste. You can even adjust it according to your taste and preference!
  5. While the curry simmers, prepare your ramen patties. Cook 4 ounces of ramen noodles according to package directions. Drain well and let them cool slightly. This step is important because you don't want to burn the noodles in the next stage.
  6. In a medium mixing bowl, mash the cooled ramen noodles with a fork. Add 1/2 cup of cooked brown rice, 1 egg, and 1/4 cup of panko breadcrumbs. Mix well to combine. The mixture should be fairly firm but still pliable. If it's too dry, add a tablespoon of water at a time until it holds its shape.
  7. Shape the mixture into 4 patties using a burger press or your hands. They don't need to be perfect; a rustic look adds character!
  8. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Carefully place the ramen patties in the skillet and cook for about 3-4 minutes per side, or until golden brown and cooked through. Be patient and take your time, we don't want to burn them!
  9. Meanwhile, warm your burger buns. You can use a bun warmer or gently toast them in the oven.
  10. To assemble your Curry Ramen Burger, spread a generous amount of curry on the bottom bun. Top with a ramen patty, a few slices of your favourite veggies (I like shredded carrots and cucumber!), and any other desired toppings. I like to add a dollop of sriracha mayo for a spicy kick.
  11. Place the top bun on and gently press down. Serve immediately and enjoy your culinary masterpiece! This is a simple recipe but can be personalized based on your taste preferences, so don't be afraid to explore your culinary creativity!
  12. Note: If the curry becomes too thick, add a splash more vegetable broth to adjust the consistency. And remember, have fun! Cooking is supposed to be enjoyable and a way to release stress. So relax, turn up the music and enjoy the process!

📝 Notes

  • Adjust the amount of cayenne pepper to your preferred spice level.
  • Feel free to add other vegetables to the curry, such as carrots, bell peppers, or potatoes.
  • If you don't have panko breadcrumbs, you can use regular breadcrumbs instead.
  • Don't overcook the ramen noodles, or they will become mushy.
