This dish is perfect for a weeknight meal or an inventive, laid-back gathering with friends, and it's actually not hard to make, even for beginners. Trust me, the crispy element from the ramen noodles will surprise your taste buds in a good way, and the creamy ricotta ties the whole thing together.

So why did I begin making this? Well, one night I was in the mood for ramen. I was making ramen, then I had a light bulb moment! What if I take the noodles and turn them into a burger? Sounds nutty, I know, but it works! This is an awesome method of getting rid of leftover ramen. And, it's utterly delectably scrumptious! I've modified the recipe over the years by introducing the spinach for an added nutritional punch and the ricotta for a little creamy indulgence. Now, it's a staple in my kitchen. It's so versatile, you can make it your own. Top it with caramelized onions, perhaps mushrooms, or even a fried egg!

  1. First things first, let's tackle the ramen. Cook 3 ounces of ramen noodles according to package directions, but drain very well; you don't want extra water messing up your burger patties. Once drained, set aside to cool slightly.
  2. Now, prepare the spinach. Heat a tablespoon of olive oil in a large skillet over medium heat. Add 5 ounces of fresh spinach and sauté until wilted, about 3 to 5 minutes. Season with a pinch of salt and pepper; I like to add a tiny bit of garlic powder too. Set this aside.
  3. Time for the ricotta filling. In a small bowl, gently combine 4 ounces of ricotta cheese with a tablespoon of grated Parmesan cheese. Mix in a tablespoon of chopped fresh basil and a pinch of salt and pepper. That's your amazing, simple ricotta mix. So easy!
  4. Next, create the amazing Ramen Burger patties. In a medium bowl, combine the cooked ramen noodles, 1/2 cup of cooked quinoa (about 1/4 cup uncooked), and the sautéed spinach. Gently mix in 1/4 cup of the ricotta mixture, reserving the rest for topping later. I like to leave some texture here, so don't overmix it.
  5. Form the patties. Gently shape the mixture into 4 equal-sized patties. They don't need to be perfect; a slightly rustic look is charming. I found that about 1/4 cup of the mixture makes a good sized patty.
  6. Now, cook the patties. Heat 1 tablespoon of olive oil in the same skillet over medium heat. Carefully place the patties in the skillet and cook for about 3-4 minutes per side, or until lightly browned and heated through. Keep an eye on them, they can burn easily.
  7. While the patties cook, warm the buns. Lightly toast your favorite burger buns. I love a slightly sweet brioche bun but any soft roll will work beautifully!
  8. Almost there! Time to assemble these delicious burgers. Spread the remaining ricotta mixture on the bottom halves of the buns. Top with a Ramen patty, then add a few extra leaves of spinach for an extra pop of color and freshness.
  9. Finish it off by topping the burger with the other half of the bun. Serve immediately and enjoy! The flavors blend perfectly. So good.
  10. Optional: Add some balsamic glaze, a little chili oil, or a dash of your favorite hot sauce for an extra kick!
