I remember the first time I tried zoodles. I was skeptical, honestly. Could zucchini really replace pasta? But one bite of these Garlic Parmesan Zoodles, and I was hooked! They're light, refreshing, and the perfect base for a burst of roasted vegetable goodness. One of my friends told me she’s been trying to incorporate more veggies into her diet and this recipe has been a godsend. The roasted vegetables add a natural sweetness that complements the savory garlic parmesan sauce. You’ve got to try it! I think… I think you’ll like it.

What makes this recipe special is the combination of textures and flavors. The tender zoodles, the slightly caramelized roasted vegetables, and the rich, garlicky parmesan sauce create a symphony in your mouth! It is a great vegetarian dinner option but you can add some grilled chicken or shrimp for extra protein if you want. I do this quite a bit. I wonder sometimes, do people really read these introductions? If you are, let me know! But you know what I mean; it is versatile and delicious and easy to adjust to your tastes.

📖 Instructions

  1. Preheat the Oven: First things first, preheat your oven to 400°F (200°C). This ensures that the vegetables roast evenly and get that lovely caramelized exterior. It's a crucial step so don't miss it!
  2. Prepare the Vegetables: Wash and chop your favorite vegetables. I like using bell peppers (any color!), red onion, broccoli florets, and cherry tomatoes. Cut them into bite-sized pieces to ensure they cook evenly. This is the step where you could cut yourself, so proceed with caution.
  3. Toss Vegetables with Oil and Seasoning: In a large bowl, toss the chopped vegetables with 2 tablespoons of olive oil, 1 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, salt, and pepper to taste. Make sure the vegetables are evenly coated with the oil and seasonings. Noone wants bland veggies!
  4. Roast the Vegetables: Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized. Keep an eye on them so they don't burn! And use oven mitts to remove. Don’t want any accidents.
  5. Prepare the Zoodles: While the vegetables are roasting, prepare the zoodles. Wash and spiralize the zucchini using a spiralizer or vegetable peeler. If you don't have a spiralizer, you can simply use a vegetable peeler to create thin ribbons. No problem! There might be some other options that you can look up. Just search it on the internet.
  6. Make the Garlic Parmesan Sauce: In a large skillet, melt 2 tablespoons of butter over medium heat. Add 2 cloves of minced garlic and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic! Nobody wants that. Burnt garlic is the devil. Oh, that gives me a good idea for a recipe…
  7. Add Zoodles to the Skillet: Add the zoodles to the skillet with the garlic butter. Toss to coat the zoodles with the sauce. Cook for about 2-3 minutes, or until the zoodles are slightly tender. I have a friend who hates zoodles. What is up with that?
  8. Add Parmesan Cheese: Sprinkle 1/4 cup of grated Parmesan cheese over the zoodles. Toss to combine and melt the cheese. This adds a savory and cheesy flavor to the zoodles.
  9. Combine Vegetables and Zoodles: Once the roasted vegetables are ready, add them to the skillet with the zoodles. Toss everything together to combine all the flavors. Make sure that everything is mixed.
  10. Season and Serve: Season with additional salt and pepper to taste. Serve the Garlic Parmesan Zoodles with Roasted Vegetables immediately. You can garnish with extra Parmesan cheese or fresh parsley if desired. What does this all mean for you? Do you like the recipe?

📝 Notes

  • Add grilled chicken or shrimp for extra protein.
  • Feel free to substitute your favorite vegetables.
  • For a vegan option, use vegan parmesan cheese and olive oil instead of butter.
