  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. This is crucial for easy cleanup and preventing sticking – trust me on this one!
  2. In a large mixing bowl, combine 1 cup (120g) of your favorite pretzels. I personally love using those mini ones, they're so cute! Gently crush them – you want some big chunks, some medium, and some fine crumbs for texture. Don't pulverize them into dust though!
  3. In a small saucepan, gently melt 1/2 cup (115g) of good quality bittersweet chocolate (but milk or dark chocolate would do in a pinch). Stir it constantly over low heat, don't let it burn; it'll taste bitter and burnt – ew!
  4. Once the chocolate is melted and smooth, remove it from the heat. Slowly pour in 1/4 cup (60ml) of beer. Stir well to combine. I like a good stout, but any beer will do; even non-alcoholic beer will work!
  5. Add 1/4 cup (60ml) of marmalade. I prefer a tart orange marmalade, but any flavor you like will work (apricot or even a spicy chili marmalade sounds interesting!). Stir until everything is well incorporated. It should look glossy and delicious!
  6. Pour the chocolate-beer-marmalade mixture over the crushed pretzels. Use a wooden spoon or spatula to make sure every pretzel piece is coated. I swear my spatula has seen better days...it's a bit beat up.
  7. Drop spoonfuls of the mixture onto the prepared baking sheet. Leave some space between each bite. They'll spread slightly while baking. This step is kinda messy, so wear an apron or something...or not, I don't judge!
  8. Bake for 12-15 minutes. Keep a close eye on them; ovens vary. You want them to be slightly firm and just a tad gooey in the center – perfection!
  9. Remove the baking sheet from the oven and let the pretzel bites cool completely on a wire rack. This is important! If you try to eat them while hot, you'll burn your tongue, and that's not fun.
  10. Once cooled, drizzle with extra melted chocolate, if desired, and more marmalade for added sweetness and tartness! These are awesome as they are, but hey...extra chocolate never hurts!
