1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. This step is crucial for easy cleanup and prevents sticking.
2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix well to ensure everything is evenly combined.
3. In a separate bowl, whisk together 1 cup of beer (any kind you like, but I prefer a nice pale ale), 1/4 cup of melted unsalted butter, and 1 large egg. The egg and butter should be at room temperature to blend easily.
4. Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon or spatula until a soft dough forms. Dont overmix; a few lumps are okay.
5. Lightly flour your work surface (if using a rolling pin), and turn the dough out onto it. Gently knead the dough for a minute or two – just enough to bring it together.
6. If using a rolling pin, roll out the dough to about 1/4-inch thickness. If not, simply shape the dough into a log and cut it into 1-inch pieces.
7. Shape each piece into a pretzel. You can look up some images of pretzel shapes online for inspiration if you want to try something fancy.
8. Arrange pretzels on the prepared baking sheet, leaving a little space between each one.
9. In a small bowl, whisk together 1 tablespoon of melted butter and 2 tablespoons of chopped fresh rosemary. Brush this mixture evenly over the pretzels.
10. Bake for 12-15 minutes, or until they're golden brown and crispy. Keep a close eye on them so they don't burn!
