  1. First, prepare your cauliflower rice. If using a rice cooker, follow the manufacturer's instructions. If using a saucepan, finely chop the cauliflower florets and steam them until tender but not mushy. The goal is to have a rice-like consistency. Let them cool.
  2. Next, season your cauliflower rice. In a large bowl, add the cooked cauliflower rice and gently mix in the rice vinegar, salt, and sesame oil. Make sure it’s well combined, but be careful not to mash the cauliflower too much.
  3. Prepare your sushi filling. I love a simple combo of avocado and cucumber, but you can make this your own. Thinly slice the avocado and cucumber, preparing it to be rolled into your sushi.
  4. Lay out your sushi rolling mat. Sprinkle a light layer of sesame seeds on the mat, and then carefully spread half of your seasoned cauliflower rice onto the mat, creating a flat, even layer – I usually make it about 1/4 inch thick.
