  1. First things first, let's prep our veggies! Finely chop one large onion and two bell peppers (any color you like – I'm partial to a mix of red and yellow). Don't be afraid to get creative!
  2. Next up, the star of the show: cauliflower rice! If you're using a head of cauliflower, pulse it in a food processor until it resembles rice. If using pre-made cauliflower rice, just give it a quick rinse to get rid of any excess moisture. I prefer to make my own because it gives it a more fresh flavor.
  3. Time to get cooking! Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once it's hot, add the chopped onions and peppers. Sauté for about 5-7 minutes, until they soften and start to slightly caramelize. Don't rush this part, the sweeter the better!!
  4. Now, let's add some flavor! Throw in 1 pound of your favorite spicy sausage (I love using chorizo!), breaking it up into smaller pieces as it cooks. Cook until browned, about 5-7 minutes, stirring frequently.
  5. Add the cauliflower rice! Stir everything together, making sure the cauliflower rice is well incorporated with the sausage and peppers. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender-crisp. If things seem a bit dry, you can add a splash of water or chicken broth to help loosen things up.
  6. For a touch of heat, add about 1/2 to 1 teaspoon of red pepper flakes. (Feel free to adjust according to your spice tolerance – remember my friend who accidently added too much chili powder and regretted it?). Stir well.
  7. Once everything's cooked to your liking, taste and season with salt and pepper. This is where you can go all in and have fun! I might add cumin for an extra kick, or some lime juice for freshness.
  8. Serve it up! I love it as a hearty side dish, but it's also wonderful on its own! Enjoy!
