1. First things first, let's get our avocados ready! Cut them in half, remove the pits, and scoop the flesh into a food processor or blender. Don't worry about being too precise here; we're aiming for a smooth texture, not a perfectly measured amount.
2. Next, chop up your chocolate! I usually use a good quality dark chocolate – around 70% cacao – but feel free to experiment. Smaller pieces will melt more easily.
3. In a small saucepan, gently melt the chocolate over low heat. Stir frequently to avoid burning, and keep the heat as low as possible. Remember, patience is key here!
4. Once the chocolate is completely melted and smooth, remove it from the heat and set it aside to cool slightly. We don't want it scorching hot when we combine it with the avocados.
5. Now, for the avocados! Add them to your food processor or blender along with the cocoa powder, sugar, and vanilla extract. Blend until completely smooth and creamy. You might need to scrape down the sides a few times to ensure everything is well incorporated. Ideally, the mixture should resemble a thick pudding or paste.
6. Slowly pour the melted chocolate into the avocado mixture. While blending on low speed, gradually pour in the heavy cream. Blend until everything is fully combined and you have a gorgeous, luscious dark brown mousse.
7. Taste and adjust! If you want it sweeter, add a little more sugar. If you prefer a more intense chocolate flavor, use more cocoa powder. This is your mousse; make it yours!
8. Finally, pour the mousse into individual serving dishes or glasses. You can chill it in the refrigerator for at least 30 minutes to allow it to set. This will help it achieve a firmer consistency, and make it even more delightful to eat.
