  1. First, we're going to tackle the avocados. Choose two perfectly ripe avocados—the riper, the creamier the mousse, trust me on this. Cut them in half, remove the pits, and scoop the flesh into your blender. Don't forget to give those avocado halves a good sniff, that's how you know they are ripe.
  2. Next, add your chocolate—I'm a big fan of good quality dark chocolate, but you can use whatever you like. Roughly chop 100g (3.5 oz) of your favorite chocolate and toss it in with the avocados. Oh and don't forget to add a pinch of salt, it really brings out the chocolate flavor.
  3. Now for the creamy part: Add 1/2 cup (120ml) of full-fat coconut milk. You can substitute this with heavy cream for a richer experience but the coconut milk adds a nice subtle flavor, in my opinion. We'll also add 2 tablespoons of honey or maple syrup (or adjust according to your sweetness preference).
  4. Time to blend! Blend everything together until it's super smooth and creamy. Scrape down the sides of the blender a few times. You want this to look like a very decadent chocolate pudding—almost too good to be true.
  5. Once blended to perfection, transfer your awesome avocado chocolate mixture to a bowl. Cover and chill it in the refrigerator for at least 2 hours. This allows the flavors to meld, so don't skip this step! It's important, really!
  6. After chilling, the fun begins! Get out your trusty ice cream maker. Pour in your chilled avocado chocolate mixture and follow the manufacturer's instructions. This usually takes about 20-30 minutes depending on the machine.
  7. Once your ice cream maker does it's thing and gives you a gorgeous, slightly soft-serve like concoction, transfer the mixture to a freezer-safe container. You should cover it airtight and freeze for at least another 2-3 hours. This helps it get that truly solid ice-cream consistency.
  8. And there you have it! Your very own creamy, dreamy, avocado chocolate mousse ice cream. Scoop it into bowls and enjoy it immediately—it's best when it is still slightly soft— or, let it freeze a bit longer if you prefer a firmer consistency. You could add some fresh berries or a sprinkle of cocoa powder for an extra touch of elegance... or not, whatever floats your boat!
