This Apple Cinnamon Chia Delight is my go-to breakfast recipe. It’s super easy to make, ridiculously healthy, and tastes absolutely amazing. Plus, it’s the perfect way to start your day with a smile on your face. Seriously, try it and see for yourself! I swear it's better than most store-bought yogurts! I started making this recipe after a terrible breakup – I needed something comforting, tasty, and healthy. And this totally hit the spot.

Remember that time I went hiking in the mountains and took my Apple Cinnamon Chia Delight with me? Best snack EVER. The fresh air, the stunning views, and this amazing chia pudding? Pure bliss. I'm not kidding, if you make it ahead the day before, it will be ready for you to take wherever you go! Anyway, this recipe is amazingly versatile! You can adjust it to your taste by adding more or less of the key ingredients. Don’t be afraid to experiment and find what works best for you!

  1. 1. First things first – grab your saucepan! Pour in 1 cup of the milk of your choice (I love using almond milk, but any kind will do).
  2. 2. Next, add a hefty pinch of cinnamon – I usually go for about 1/2 a teaspoon, but feel free to go wild. Taste is subjective, after all!
  3. 3. Now, carefully slice up your apple. I usually get about 1/2 a medium-sized apple, thinly sliced, to add that perfect sweetness.
  4. 4. Add the apple slices to the saucepan along with the milk and cinnamon, and gently heat up the mixture. You want it to be warm, not boiling hot.
  5. 5. Ok, here’s where things get interesting. Remove the saucepan from the heat and add 1/4 cup (or less, remember what I said before?) of chia seeds. Stir it all together with a whisk, making sure there are no chia seed clumps.
  6. 6. Now the waiting game begins! Pour the mixture into your chosen container (a small bowl works just fine) and cover it. Pop it into the fridge for at least 2 hours, or even overnight if you're really busy. The longer it chills, the thicker and more delightful it gets.
  7. 7. Ta-da! Once your Apple Cinnamon Chia Delight is nice and chilled, give it a taste test. Add a little more cinnamon if you think it needs a bit of a kick, or a dash of maple syrup if you're craving some extra sweetness. You are the boss of your breakfast!
  8. 8. Top with extra cinnamon and apple slices for an extra gorgeous touch. Dig in and enjoy! It's a healthy and oh-so-delicious way to start your day!

📝 Notes

  • Feel free to adjust the sweetness by adding honey or maple syrup to taste.
  • If you like a thinner pudding, use a little less chia seeds.
  • Get creative and add other fruits or nuts to suit your preference! It's the best!.
  • If your pudding is too thick, simply add a tablespoon of milk or water to thin it out.
