This recipe takes the comforting flavors of sweet potato pie and transforms them into a creamy, dreamy chia pudding. It's the perfect autumnal treat – imagine a cozy evening, a warm blanket, and this delightful pudding. I personally love the warmth of sweet potato, and it's an awesome base for a healthy dessert.

I came up with this recipe after a friend told me about the amazing dessert they'd had while visiting a farm in Napa Valley. This recipe is my slightly adapted version, slightly healthier and much easier to make at home than you would think.   1. 1. **Roast the Sweet Potatoes:** Preheat oven to 400°F (200°C). Wash and scrub two medium-sized sweet potatoes. Prick them all over with a fork. Place on a baking sheet and roast for about an hour, or until easily pierced with a fork. Let cool completely. This step is crucial, don't rush it!
  2. 2. **Prepare the Sweet Potato Puree:** Once the potatoes are cool enough to handle, slice them open and scoop out the flesh. Add to a blender or food processor. Blend until completely smooth and creamy. You might need to stop and scrape down the sides a few times.
  3. 3. **Make the Pie Spice Mix:** In a small bowl, whisk together 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground ginger, a pinch of ground nutmeg, and a pinch of ground cloves. Seriously, just a pinch! Don't go overboard with the spices.
  4. 4. **Combine Sweet Potato and Spices:** Add the pie spice mix to the blended sweet potato. Stir well until evenly combined. The beautiful orange hue will darken slightly, it's all part of the magic!
  5. 5. **Whisk in Maple Syrup:** Add 2-3 tablespoons of pure maple syrup (adjust to your desired sweetness level). Stir everything until the syrup is evenly incorporated. Taste test this mixture, you'll be surprised how delicious it is on its own.
  6. 6. **Blend in the Coconut Milk:** Pour in 1 can (13.5 oz) of full-fat coconut milk. Use a whisk to gently incorporate it. Do not over-blend, we don't want to make it too fluffy. We want a nice and smooth texture.
  7. 7. **Add the Chia Seeds:** Stir in 1/4 cup of chia seeds, making sure they're completely mixed in. These little guys are responsible for turning our mixture into pudding, so make sure they get evenly distributed.
  8. 8. **Chill and Set:** Divide the mixture into four small jars or glasses. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the pudding to thicken properly. Patience, young padawan!
