This dreamy white chocolate raspberry chia pudding is the perfect healthy treat for any time of day! It's creamy, subtly sweet, with a delightful tartness from the raspberries. It's also unbelievably easy to make—even I can do it, and I’m notoriously bad at cooking (true story)! My friend, Sarah, raved about a similar recipe, so I decided to give it a go. It became an instant hit in my house—and I'm so excited to share it with you! I hope you’ll love this recipe as much as I do!

This recipe is ideal for meal prep! Make a big batch on the weekend and enjoy it throughout the week for breakfast, a light dessert, or a healthy snack. The creamy texture and burst of raspberry flavor are so satisfying, and the chia seeds provide a fantastic boost of fiber and nutrients, making it a guilt-free indulgence. I know how much we all love satisfying sweet things without the sugar crash after.

📖 Instructions

  1. In a medium mixing bowl, combine the chia seeds and coconut milk. Whisk vigorously for at least 30 seconds to ensure there are no clumps. Trust me on this one, those chia seed clumps are a nightmare.
  2. Add the white chocolate chips (or chopped white chocolate) and the raspberry puree. Give it another good whisk to combine everything nicely. The mixture will look a little grainy at this point.
  3. Pour the mixture into individual serving jars or a single large bowl. Cover with a lid or plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the chia seeds to fully absorb the liquid and create that wonderfully thick pudding consistency. Don't forget this step!
  4. Before serving, give your pudding a gentle stir. Add fresh raspberries and white chocolate shavings (or a drizzle of white chocolate sauce) for extra flair. Seriously, it makes it look fancy, even if you're just having this after a long day of work and wearing sweatpants.
  5. Optional: For an extra decadent treat, you can swirl in some raspberry coulis or even a little bit of raspberry jam once you've layered your pudding in the jars. Mmmm, yum!

📝 Notes

  • If using frozen raspberries, let them thaw slightly before pureeing. Otherwise, you'll end up with a smoothie, not a pudding!
  • Adjust the sweetness to your liking by adding a touch more or less of the raspberry puree, depending on how sweet or tart you want it. I prefer a balance between the white chocolate's sweetness and the raspberries' tartness. It's important to find your preferences!
