  1. First, wash and chop the apples. I like to slice them thinly, about 1/8 inch thick, for even cooking. Don't worry about being too precise; rustic is nice!
  2. In a small saucepan, combine the water and maple syrup. Heat over medium heat, stirring occasionally, until the syrup dissolves and the mixture simmers gently—think warm hug, not scorching inferno.
  3. Add the cinnamon to the simmering syrup. Stir well to combine. I find a generous teaspoon really makes the cinnamon shine. Mmm, smells amazing!
  4. Add the sliced apples to the saucepan and gently toss to coat them evenly with the cinnamon syrup. You want them all happy and snuggled together!
  5. Simmer the apples for about 5-7 minutes, or until they are tender but still hold their shape. If you like a bit more of a bite, reduce the cooking time. If they're mush, you cooked 'em too long!
  6. Remove the pan from the heat and let the apples cool slightly. This helps them retain a bit more of their texture and keeps them from turning to applesauce.
  7. Once the apples have cooled, gently transfer them to serving bowls. I like to arrange them artfully, but really, however they land is fine!
  8. Drizzle a little extra maple syrup over the top, if desired. That extra touch of sweet is oh-so-good. You could even add a sprinkle of extra cinnamon!
  9. Serve immediately and enjoy! This warm, comforting bowl is perfect for breakfast, a snack, or even a light dessert. And, you know what? It's just downright delicious!
